Micheal Mikolajczak was born and raised, and spent most of his professional life as a chef, in the North of Germany. As a consequence, he has a profound understanding of the region; its seasons, its ingredients, flavors and culinary classics as well as an extensive network of suppliers and producers that he enjoys working with. Fostering relationships with local producers brings him to cook exclusively with regional and seasonal produce, creating a sustainable vision with the dishes he serves.
